Here’s a variety to your everyday tortillas (if you’re Latino, you might have tortillas every day). Super easy to make and might even help your digestive system with a little push, since they contain a lot of fiber.
INGREDIENTS:
1 cup oat flour
1/2 tsp baking powder
1/2 tsp salt
4 tbsp avocado oil or melted coconut oil
1/2 cup warm water
INSTRUCTIONS:
Mix all dry ingredients and add the oil and water last. Separate the dough into small balls (I made 5 large ones). It should be sticky. Let the dough rest for 10-15 minutes. Make the balls into tortillas with a roller or tortilla maker (or your hands!) and cook for 30-40 secs on each side. Ready!
TIP: to avoid dough sticking to your hands add 1/4 tsp oil to your hands and rub.
My toppings for this one were turkey stuffing leftovers, I sauteed some zuchinni, red oninos and yellow bell peppers with some coconut cooking spray and on top I drizzled some avocado dressing (homemade). DELICIOUS!
But, toppings are endless. You can even eat them with your favorite nut butter for breakfast!
